Cheesy, crunchy, spicy nachos are everyone’s favorite snack. Nachos hit all the flavor notes you want from a savory dish, plus they have the perfect crunch, but where did they come from? Who was the culinary genius that gave us the delicious dish of nachos!?
The Inventor of Nachos
Just over the Texas border into Mexico is the legendary town where nachos were born. Piedras Negras, Coahuila, Mexico, is where the first plate of nachos was served. At a restaurant called the Victory Club in 1940, a chef named Ignacio ”Nacho” Anaya first created this culinary wonder.
One fateful evening, a customer asked for something new, and Ignacio had the wonderfully creative idea of combining fried tortilla triangles with Colby cheese and jalapenos. He then baked them into a melty mess of deliciousness and served his new creation. The dish was an immediate hit and named Nacho’s special in Ignacio’s honor.
Ignacio would go on to open his own restaurant. He eventually printed his legendary nacho recipe in 1954 in St. Anne’s Cookbook. His first version was simple, but it would inspire every dish of nachos that came after it.
Nachos have been reinvented and recreated with so many variations since then. They are a party-time favorite and the perfect pig-out snack! Melty cheese and crunchy chips work! Some nacho variations include meat or beans, while others are simply chips and cheese, but no matter how you eat them, you owe a thank you to Ignacio Anaya for this tasty savory sensation.

Since that fateful evening at the Victory Club, nachos have been baked up in restaurants and homes internationally.
